Young Samurai Dreams of Sushi

So,

My wife loves sushi rolls.
When we go on a date, it's (almost) always sushi.
So what can I do? I had to learn to make the girl some sushi... but to make sushi, I explained, you have to have the right tools :twisted:
Enter Young Samurai :mrgreen:

It was a real pleasure, a little stressful, and slightly intimidating - but finally, supremely satisfying! And to top it all off, it was good AND the kids loved it!

Here's my very first attempt at the art that I hope to hone.

When I first got this 240 Yanagi, I found to be in rather excellent condition. The F&F were very nice. The neck area on mine is well done and not sharp. The grind, though not even throughout the blade road, was really quite alright, and ootb edge was much more than workable. Why then did I put it to the stones, God only knows... In any case, I took it to task, and botched it up real bad, not thinking of any proper technique, just winging it.
The next night (last night), I went over a Korin video, and voila, a few minutes on a 1k, followed by a 6k, followed by just a few more minutes on a... shoot, I forgot the name of that natural, but that - and now it's not looking THAT sorry anymore. It cuts like a hottori hanzo, though 8-)
Mark, thanks again for backing those young fellows - the price point really allowed young fellows like myself to enter another knife to the (IT'S NOT A) collection :)

I really needed to hear the basics all over again. It's amazing how long you can spend on doing something wrong, and then how relatively quick it takes to do it right ;)

I had leftover rice and fish the next day, so I let me bonnie lass try rolling and cutting - she loved both (especially the cutting!)
She makes me so proud :)
This time she included in the photo (yes! she even arranged :mrgreen: ) some of the pickled ginger I made.
Greatest compliment she could give me was "wow, Dan! It tastes just like in the restaurants!" It's that easy (the ginger, that is)

Oh,

I think the most useful tip I caught out there (only one video I saw mentioned this) was to have a ice-cold wet rag nearby, to swipe the slicer clean after every cut (of the finished roll).
That sticky rice really sticks, and it will effectively ruin your roll if you try to cut while it's still on the blade. The cold water helps.

There are much more experienced fellows around here that are more than welcome to add, correct, or just generally chime in. Mauichef?

I've had a few more tries, and the process is gradually getting smoother, and less cluttered around the kitchen!
I love how it is both pleasing to the eye, the palate, AND the kids! Man, my 3yo gobbles up that raw tuna like there's no tomorrow - and he exclaims Sooosi with a big ol' grin :D

oh yeah...

I'm not sure what to do about that. The first one I got was from Korgers; an ugly mix set in egg sauce (not my taste at all!)
The next one I got looked much more legit, from Spouts; it was a small can of powder, from which I took a few pinches and mixed with a bit of water to reach the right consistency... but it was almost pure horse-raddish (maybe 1% wasabi), and way too sinus-opening-strong, ya know?

Anyone have any tips on where/how to get my hands on better stuff?

Still lots of horse radish but better then other store brands. My sushi place is going to order me some. When I get it I will let you know the brand so you could order it on line.

Asking the sushi place sounds like a good idea, too.
There's a casually good one nearby, and there's a real fancy one we enjoy on special occasions that is superb...
