I've been eyeballing this one and the Kato KU shuminigashi. I love the look . I'm in for sure. The handle complements it very nicely.

Oh... it does look thin behind the edge. I'd be interested in joining if the knife happens to make it's way to the west coast.

The Ogata is in my possession. Interesting knife. Cut a small watermelon this morn. Quite sharp. Look forward to using this week.

I apologize for the delay in shipping this knife out, I had it all packed up and ready to go before I went on vacation and then left it on the kitchen table, sorry about that.

I enjoyed using the knife and understand from George's explanation why it's so similar to knives like Masakage and Kurosaki.

My first impression of the knife were, wow this thing pulls off rustic, more so with the KU finish beginning to fade a bit, the cladding looks good and segues to the core nicely making it look genuine as though its been working away for centuries in some Japanese kitchen.The profile, specifically the tip is lower then I would prefer making it a flatter profile than say the Makoto or a Kamo but was very nice for push cutting and chopping which I have been using more and more. the fit and finish of the handle were great and felt good in the hand with a pinch grip, weight ing felt neutral for me with maybe a tiny, tiny bit of blade heavyness but only just.

I received my Makoto 240 just after getting this knife so I did a lot of comparing between the two and also the Tanaka. The Tanaka is just a totally different knife as I think a lot of you already know or would guess, but the Makoto is much more similar. A plus in my book for the Ogata is that it feels a little bit tougher/less fragile even though it is also very thin behind the edge, I felt more confident in using it than the Makoto. I stuck to veggies (carrots, potato, celery, green pepper) which it handled without effort save for the green peppers which showed the edge needed attention and after a simple stropping was back in business, ah white steel.

The edge as I received it felt still sharp but well used so I took it through a progression of SG500, Aotoshi 2k, Arashiyama 6k and finished on bare bovine strop before sending it off to jbart.

I want to thank George for allowing me to demo his personal knife and look forward to returning the favor.

I am done with the Ogata. Review in a few weeks after I shuffle the kids off to college. Thanks very much, George, for the chance to use this knife. I had been looking at it for a while.

Hard for me to conjure another knife that's quite similar. The Ogata is not very different from other knives, but the whole package and custom handle makes it hard to pigeonhole.

I received this one in good order. Pictures don't do it justice, this thing is seriously attractive.
