Mark has already changed it over to Mazaki with a bit of a price increase.

I can attest, CJM can sharpen. I wish I had half his skills.Chefcallari wrote: ↑Mon Apr 30, 2018 12:25 pm Gentelman!.....

Re: Yahiko Shirogami Hairline 240 passaround
Thank for the kind words, guys!
The knife had not been sharpened by the previous recipient before it was sent to me, which was good because even without a touch up, it was still pretty sharp, so there was no need for a full progression. Had it been touched up, I doubt I would have gotten the chance to put it on the stones at all.
@Chef, the edge that's on there is Aizu --> Maruoyama Suita. I love a toothy edge and those two leave it in spades.

Yeah, I figured you wouldn't mine touching it up. I was putting it head to head against my mazaki.cjmeik wrote: ↑Mon Apr 30, 2018 4:42 pm Thank for the kind words, guys!

On that note I forgot to give you props on that megumi edge that you sent to me. The vg 10 was quite nice!
Re: Yahiko Shirogami Hairline 240 passaround
Thanks, Ramon. If I remember correctly that VG10 actually gave me fits. Very glad you enjoyed the results. And yes, thanks VERY much for allowing me the chance to get the Yahiko on the stones!

Re: Yahiko Shirogami Hairline 240 passaround
Being interested in the Mazaki really makes me regret not getting in on this one. But back when this started I had a whole lot on my plate at the time!

It's been gone a long time, but if you don't mind, I wouldn't mind giving it a spin.

Re: Yahiko Shirogami Hairline 240 passaround
Knife is now in my possession. Knife is screaming sharp! Don't know if Steve touched it up but if this still has the edge Chris put on it all I can say is,"damn dude, you got some chops!" I need to get a couple naturals!
Looks and feels like cutter but a little disappointed in the undersized stock handle. It's well made but to small for this knife.
Thanks for the opportunity David, I'll try to get this headed home at the end of next week.

I hope you enjoy it Jeff. The handle is oddly small for the blade size.

Re: Yahiko Shirogami Hairline 240 passaround
I guess it just felt so "toothy" sharp I thought it might be a Jnat edge but it's just the low grit finish.
I did put it quckily to some potatoes and an onion last night and was very underwhelmed in its performance. Don't know if it was the edge or the geometry, but I will get to the bottom of this.
I was expecting a lot more, making me second guess my desire for a Mazaki.

Now I'm intrigued!
I'm Dave. I don't take myself too seriously and you probably shouldn't either.

Re: Yahiko Shirogami Hairline 240 passaround
Very good to know! I wonder if Mazaki will make any changes to the Hairline now that his name will be on them...
I wonder how the JNS version compares with the version sold by Cleancut. Have heard good things about both.
