Re: Kanehiro AS Gyuto 240mm
The ship has arrived!
As I told Nick in a message, you are one damn good sharpener! Wowza. Right up there with the edge JS Gillis gave me on my Yuki nakiri.
Oh, and there is a treat for the rest of you that I won't spill. Though I suspect a few of you will prove to have some in-the-know.
After I am done, the package goes next to:
Cutuu
J David
Cjmeik
SolidSnake
First impressions: The Kanehiro is a very classy lady wearing denim but still looking like a dame.
Reminds me a lot of my Saji ginsan (since sold) and Tetsuhiro Hammered. Very different knives but at a similar level of refinement.
Fit and finish are impeccable - the connection between ferrule and handle is as good as any I have encountered.
The performance matches the looks, not surprisingly. This knife is elegant rustic with a killer edge and fine all-round profile.

The Kanehiro is on its way to Cutuu. Thanks very much, Nick, for the chance to use the knife. I had the impression it was a nicer version of the Anryu Hammered - a terrific knife in its own right - but the Kanehiro was a bit nimbler and a smoother cutter. A wrapup soon.
The knife came with a fantastic edge that lost little of its bite during its time with me. I just stropped a few times on a 6K Suehiro Cerax before sending along.

Awesome! I'll check my inbox, I think I deleted it by mistake, box was getting full and I might have been a little over zealous in cleaning it out

First Impressions:
Kanehiro is balanced, confident, all around solid
Gihei is 0_0
Will post more in-depth info this weekend, I plan to sharpen both as the edges could use a touch up.
