KUROSAKI AS 240 KU GYUTO CUSTOM HANDLE - SOLD!

Post by Marc4pt0 »

This is one that I honestly thought I'd never sell. Hands down one of the best guest cutters I've ever had. In fact it became the benchmark for all other knives I've owned. The 'W' like grind is just insane. If it were a 220mm it would have a permanent place in my daily kit. It's that awesome.
And si is the custom handle that Ian from Haburn knives installed. The wood is spalted tamarind, IIRC, with a stainless steel bolster/ ferrule that balances the knife perfectly. Also, the spine and choil have been rounded nicely.

There's 2 reasons why I'm selling this gem. First is that I hardly use it lately as I've retired to knives around 220mm to 230mm in edge length. This specific example hits 245mm which was once my sweet spot. Second is I need to raise funds for a konosuke MB. So with that said, I'd certainly entertain a trade for said MB.

As I mentioned, the edge length is 245mm, heel height is 52mm. Spine out of the handle is 5mm. Overall the knife is in Fantastic condition. It's been sharpened once, touched up once, and stropped on Jnats a handful of times during its tenure here with me. During this time it's seen off and on use as rotate through my collection regularly.

Asking price is $510 which includes PayPal and 2 day priority shipping in the conus.

From what I understand Ian doesn't do custom handle jobs anymore, let alone this style of handle. Price of handle cost me a total of $350.

That is a beauty. Two questions: where does the knife balance out (blade forward)? And, can we have a spine shot to see the distal taper please!

I'll snap some shots tonight after work. In the meantime, I will say the balance is right on the choil area. Definitely not blade fwd. Ian made great efforts to make sure this gem is balanced perfectly.
As for the taper, it's gradual and where the "shinogi" rises up before the tip it starts to get Very thin. This bad boy flies through onions, and just fallllls through carrots!

So balanced for tip work. Very interesting.

With a 5mm spine at handle, how does the grind compare to the Kato workhorse?

That 5mm spine comes right out of the handle, and is more like 4.8mm or something like that. I can measure when I snap some shots. It tapers pretty quickly and continues slightly towards the tip. The tips work on this is awesome. It's thin where it needs to be and Destroys shallots, as well as brunoise potatoes (like dicing onions) with ease.
If you want me to compare it to a Kato I can I've had 3 western handle WH 240 Katos. All 3 of which I sold, keeping this instead. Different knives, but when it comes down to cutting stuff (which to me it does), this Kurosaki blew the Katos ( & the 2 Shig I had) out of the water by a long shot. This will sound biased as I'm trying to sell this knife, so please take it for what it was honestly meant to be- my opinion based on my experience.
This knife wont leave you regretting, that much is for sure. Again, if it were more around a 220mm, it would be my daily driver or very close to it. But if it were a 220mm, the whole balance with the handle may not work...

And distal taper. My apologies, it's 4.2mm thick at som spine where the handle meets.
