Hi guys.
My friend pablito is about to get his first sous job, and wants to walk into it with his first good knife on his hands.
The budget is 150ish, less is better.
Looking for a 240+ gyuto with good steel, either handle isfine, preferably thinner behind the edge, but that can be fixed. Help me help him!

I'm not a pro at all but just in regards to the price, Kanehide and Fujiwara come to mind. I've never used either but given the Kanehide Ps60 as a gift a couple times (again not to pros). It was very enjoyed. I love my Mac pro but that seems a bit above budget but might not be elsewhere.

Ill go for one of those or a tojiro r2 if nothing pops up, . I just sold my kurosaki r2 for 135, and a yoshikane skd for 160 iirc acouple of months ago, I wish i had known a little earlier, he would have one of those two by now. im looking for a used knife with good bones and life left ahead. Ill thin, reprofile, rehandle or whatever it needs.

I immediately thought ps60. I think it’s an easy one and done for pro settings. I also have a Goko 19c27 hammered in wa(ugly chestnut/plastic) but with good geometry and kanji. I never use it. I’m a 210 guy. Only problem is the handle isn’t set. It’s the way I bought it. It needs epoxied.
