It was used for one partial meal of test cutting. Then, a Kurosaki western came up for sale, and I bought it. This one is practically new. Currently out of stock.

220 Shibata Kashima R2 Gyuto
Masamoto KS-inspired profile. This is a thin laser that has been a lot of fun to use. Ultimately, it’s just a bit small and short at the heel for my tastes, so I’m letting it go. Excellent condition, sharpened once. Handle was coated with boiled linseed oil/beeswax blend. I haven’t seen these in-stock for a while, not sure if or when they’ll be coming back.
