WTS Shigefusa Kurouchi 180mm Wa Nakiri
I kills me to part with this guys...
but after switching jobs I'm in that limbo to catch up on bills and waiting for my first full paychecks so....
It was a toss up between this or my Toyama Damascus 270mm....but I've used this far far less.
So....
It must go.
Just a little bit under 180mm on the cutting edge and 53mm tall.
It's got some excellent weight but feels awesome in the hand. I do not have a scale handy but I could get the weight this weekend.
It's seen very light use and been coddled.
I had dpham make an awesome one piece handle and he used a beautiful piece of Indonesian tulipwood.
Fit and finish are awesome and it's both a user and a collector piece. 180mm are a little bit less common and this is super fun knife to use!
Obviously with the custom handle it cost me more than the most recent price I could find at around $400.
I believe I have a little bit over $500 in it.
So let's say $410 all in for US shipping and PayPal fees.
But I will take a look at any reasonable offers right around there..... considering my predicament.
I do have the original box in great shape.
Hopefully some will get as excited as I did and do about this really special knife.

Hi David. That is a beautiful knife made with a very good steel. 180mm also is better than the 'standard' 165mm, it really feels different. Upgraded handle is also a plus, and at that price is a steal. Toyama 270mm damascus is also from another planet!! Wish I have the money I could make an offer for both eheh

I agree. His regular line of knives are excellent...but the heat treatment on the Dami is definitely worth the extra money.

I'm going to bump this, because I think I finally honed in on a couple of knifes to round out my work kit.
Since this post started it's been in loose rotation in my kit but not really. It's wearing a good kasumi finish on the blade road and cuts great....but I need a tip on knives this short!
Ideally this covers a 270mm gyuto or a couple of the smaller guys I'd use waaay more.
There is a couple of brands I'd maybe trade for....T.F. depending... Konosuke HDs... there is a few I'd love to get....
But, if you know me on here and think there's something I might like in that class PM me.
I'm going to plan on leaving this open until I get the few that I'd like. Tax season folks!

Always cool chatting with my fellow knife junkies.
I'm going to post current pictures in the morning but also after talking with a few people it made me think about the process of getting a knife... either new new or from another user.
The build up, and disappointment when it cuts like crap or there's huge flaws or whatever.
For example: new shig nakiri can wedge and it's annoying.
On any knife! But it's especially annoying when you spend a ton of money and it cuts tomatoes like a foot.
I've had it happen on knives that cost allot of money.
Then you have to decide: keep it NIB to sell or jump into working on it and possibly potentially loosing money if you mess up or still don't like it because it's not new anymore.
I'll post better pictures of the slight tuning it took to get it dialed in so horizontal cuts where not a problem and I'll try to be generally specific.
The details I'll save for a post I'm brainstorming.... new/used knife buys gone wrong & redemption.

That describes my Shig KU Santoku, so thiccck. Took me two weeks to thin it way down to half the original thickness behind the edge to perform.

I had a 180 shig Nakiri and the grind was excellent. The best out of the three shig nakiris I used. I miss that one, probably shouldn't of sold it but oh well.

The grind was great on mine too, but it wasn’t sufficient to make it a performer. I read that Shig. use KU as the starting point to make Kasumi/ketaji versions, he thin them wayyy down. If that’s the case, his KU would be much thicker edge than Kasumi/Ketaji by definition, unfortunately.

Mine performed great, straight out of the box. Mine was pretty good too actually.
But it's happened with the nakiri I've sold that they somehow have this reputation of being too chunky or wedgey. I had someone meantion that when inquiring about this knife. So i figured it was worth bringing up.
Mine was pretty good out of the box...
And right now it's a giant straight razor.
I was thinking in broader terms after selling and buying so many knives.
Heres a better example:
I lusted over the Nigara Amon Dami gyuto forever.
Saved, hunted....
Finally got one and it was so not what I wanted or read about...it was the exact opposite!!!
I wanted a solid beefy gyuto and what I received was more like a laser.
Then I found out the maker changed the design to accommodate public perception of his original design being too chunky and not performing well.....
Needless to say I was pissed.
Not only had I saved forever but now I had to sell it and loose money. I'd still love an original design one!!!!
At one point when I had extra cash I even begged the maker directly to order one with no responses.
I've since just given up on that particular gyuto and moved on but it was interesting to though that. In that case no amount of thinning, polishing or fine tuning was going to make a good cutter.
On the other hand....
Also I think people who buy sell tend to get excellent knives that might be "meh" but are to afraid to do much of anything about it because it might mess up the resell value of the knife.
We've all done it.
You make a judgement call, but of course if it's not close to stock or NIB it will mess up the value even if It absolutely cuts 1000x better and becomes a great knife.
But really I have to figure out a good way to write a post that separate from this, if I ever have free time from the work kitchen....lol.
All I will say about this shig posted is:
it's a beast and it's dialed in.
But I'm leaving it on the table because I know someone out there either has something I'll use more in a commercial kitchen or someone will use it more than I and it might find it's forever home....
That part is an awesome feeling.
It's why I never try to break even or gouge people.
For my taste and use now I'd almost rather find an unloved 270mm T.F. that needs work than hold onto a knife i really only use occasionally even if it is a work of art.

I should list some specific knives I'd like for my current kit that would be fine used and tend to be floating around.
Konosuke HD: prefer ebony handles or western.
270mm, Petty, possibly another 240mm especially if it's an Ebony handle.
T.F. gyutos or the right petty knife...
180mm - 270mm
No real preference on finish style because I'm more concerned with the specific blade because he has so much variance. price and quality in his lines.
These are ones that can or have tended to fall right around this price range used.
Or less for some.
There's a couple more but I'm getting those new.
