Im looking to try a Konosuke Funayuki profile gyuto. Any steel type or handle; hoping for a 240mm length.

I'm not sure about the W#2 steel; I recall photos of HD, HH & Fujiyama series. A w#2 would be awesome.

I got into J Knives after the Funayuki was ever available. Anyone have any information on this knife? It's purpose, and why it's not still produced or offered any longer. The profile on them look great.

The profile is great. I don't have any information, sadly. They sold them for a while. My guess is that, like most of the "variations," they stopped being offered in order to simplify and increase production of the more standard offerings. The edge profile reminds me a lot of the KS for very specific reasons: it is not a "KS" profile due to the length and height, but it is much more of a dagger shape than most gyutos, and the edge is less of a gradual curve than a gradual line. It is not "flat," but it feels like like a normal gyuto or santoku (flat+belly or tip), and more like the KS (gradual wedge shape from back to front with a higher, pointy tip).

Good luck, these are rare as hens teeth. I've seen 1 or 2 come up in 4 years.
