Shiraki Tesshu 300mm Gyuto - SOLD!

Post by J david »

For your consideration, a Tesshu 300mm Gyuto in white #2 By Shiraki. This is a catch and release with a quick finger stone polish thrown in for free. The knife looks way better than new IMHO. I've only made a few test cuts before polishing and just touched up the edge once after polishing. I found that 270mm is my current limit. For those that like a larger knife, this is a prep beast with a very nice grind ending in a very usable tip. Horizontal cuts through onions were easy and smooth and the knife is thin behind the edge with a robust spine. Asking $285 shipped, buyer responsible for fees if any. I will ship internationally for additional shipping cost.
Specs:

287mm
52mm tall at the heel
294g
Spine above heel 4.7mm
Spine at half length 3.3mm
Spine 1cm from tip .8mm
Nice octoganal rosewood w/ horn ferule
Nicely eased spine and choil
Comes with original box

GLWS and very nice finish. Too bad it has a faux shinogi, I thought they were true wide bevels. That is a let down for sure. It looks better now with what you have done to it than the stock images, though! Way too much knife for me. :P

It is a true wide bevel, just not as precise a grind as they appear. It is a very nice grind in terms if performance. Many knives are finished this way from from lots of different makers.

Interesting. It does not look like it after your finish. It looks great. Thank you for the clarification! Now, if only it were a 210 or even a 240...
