You will be happy, it is a beast! Munetoshi knives are rustic but monster cutters. I had the Itinomonn Honyaki and have the Itinomonn Sujihiki then bought the butcher then had to get the petty then the gyuto. At the price point they are phenominal.

Please post your impressions, Ben. Probably like others, I wonder if it's worth having one of those rascals around. I don't break down many chickens (other than the rotisserie-cooked ones ) but it looks generally handy. Also curious about how you like the size and shape of the Munetoshi vs the traditional Honesukis you considered.

I posted on another forum I was looking for finishing stones in the 8K range to up my sharpening game. This guy offered me his jnats, but I was not quite there yet. He also offered me this Munetoshi when I said I was looking for a Honesuki. This thing is a beast. I expect chickens to see this knife coming just fall apart. I have plans for the handle too. 1) it is overkill for what I need, I am not complaining, just being realistic.
2) it is a beast, I don’t think this knife will flinch at much.
I am still curious how this knife handles compared to a Honesuki in a side by side, but not curious enough to spend the money. I think I will spend some time with this knife and debone/stuff/spins a chicken or pork roast. I have seen a few of these pop up used lately and think they are well worth the money.
