Hello, thanks for the kind words. Yes, I am the maker of all these knives. I've been a hobbyist knife maker for about 4 years now. I am currently purchasing steel from Alpha Knife Supply and heat treating through Peter's Heat Treat Inc. I do 50/50 grinds with slight convex for food release. Most of these are ground thin and I guess would be considered "lasers". They are finished by hand sanding to 600 grit for a matte finish. I am a full time Chef so these knives and handles are made to be used in a professional kitchen. The handles are designed for comfort and long trips to the cutting board. The blades are profiled for push cutting with slight rocking capabilities. Hope this answers some questions about who I am, let me know if I can answer anything else.

They are just a design element making it slightly offset to allow less blade passing through food without weakening the structural integrity of the spine.

People, y'all need to realize these prices are crazy low for this level of work. Just the handles alone would go for $150-$200 at least...

That was exactly my impression. If the choil shots + finish suggest anything, it is very dedicated and careful work. These look like really terrific deals and I hope someone bites. I'm going to gives these some serious consideration myself. No doubt the heat-treatment is excellent and that the handles are also stunning—the added pictures help. And I'm a pretty massive snob with silly training when it comes to aesthetics and I have to admit the notched spine (and other elements) take my breath away. Wowza.

I was looking at #5 myself. I swear to you if i had the funds i would buy that one.
