Sweet Ashi. How can you tell it's the new profile?ashy2classy wrote: ↑Fri Aug 10, 2018 6:02 pmYep, this is the newest profile from Mazaki, but from Cleancut.

I was under the impression that all of his new knives were with the new profile, not just for JNS. I still believe this is the new profile as the older profile had a lower tip and more pronounced "beak". I'll double-check with CC.
Re: WTS: Mazaki 245mm Gyuto
That very well may be the case. I just wasn't sure. Also, I didn't know if it was new vs old stock. The old profile is actually quite nice it's not really as flat as it's made out to be.ashy2classy wrote: ↑Sat Aug 11, 2018 1:56 pmI was under the impression that all of his new knives were with the new profile, not just for JNS. Regardless of weight the older profile has a lower tip than this version. There is more upsweep with this one.

Re: WTS: Mazaki 245mm Gyuto
I looked at the pic of mine again to see if I could tell anything. Looking at it, it does appear that the tip may upswept a little more and the profile a little different. Perhaps, the cleancut handles add a little extra weight to, idk for sure, just saying maybe?

My 215 from Cleancut has a nice Oak and Horn D handle on it.

Can't believe this knife is just sitting here at this price! What more could you want or get for $215, chicken feed for a knife of this caliber!

Loved that Mazaki knife that was on passaround. Performed beautifully, and took gorgeous patinas. GLWS man
