Dalman/Watanabe/Shigefusa/Moritaka
Please see below for a few knives that I would like to sell. Apologies as the photos are quite poor. If you need any more photos, please let me know.
Dalman 220mm Gyuto
I am the 2nd owner of this knife. The first owner said that it had only been used to prepare one or two meals and in all fairness that is all that I have used it for. I have never sharpened the knife. Saya included.
L- 220mm
W – 112g

AEB-L steel with a curly birch and reindeer horn handle

Watanabe 165mm Nakiri
I got the knife directly from Watanabe. I wanted a white steel kasumi nakiri but I am not really using my nakiri’s that often so I am letting a few go. This knife has never been sharpened, just stropped once or twice. The knife has probably not been used for more than an hour in total.

Yasuki white steel/soft iron clad with a burnt chestnut and horn handle.

Shigefusa 180mm KU Nakiri
I bought this knife from JNS. It has been sharpened once and hasn’t been used for more than an hour in total at home. I personally prefer other nakiri’s to this one hence it is up for sale.

Swedish carbon steel with a ho wood and buffalo horn handle

Moritaka AS Deba (Double bevel) 165mm
I bought this knife directly from Moritaka a few years ago. It has been sharpened once by me and has only been used to fillet a couple of fish. I have just bought a Mioroshi Deba so this knife is redundant.

AS steel with Rosewood handle and Pakka Wood Ferrule.

I had to choose between the Wantanbe and the Shig. I haven’t had a Wantanbe and went for it but I agree, that Shig should get scooped up soon enough. The profile on the Dalman is tempting too. Decisions.
