Strong preference for a stainless or semi-stainless gyuto, 225-230mm on the edge, ~50-52mm tall. Nice handle a plus—I’m a sucker for burl or other nice wood. I'd consider a DT ITK and some cash, but am hoping to find something even nicer, if possible.
Stats: ~254mm heel to tip, 53mm tall at heel. 261 grams. PD-1 steel, which just might be my ideal steel. This knife is just a bit long for me to use and love as much as I’d like to. Main handle wood is afzelia xylay (gator skin). Very light home use, practically new.
I believe this knife could be someone’s unicorn—I’m hoping to also find mine in a trade. My ideal trade would be a shorter version of this knife (probably not likely . . . but, I've gotta try)
