FS: Carter 240mm KS gyuto and Takeda SS clad nakiri
Carter Hopkins 240mm KS profile guyto in 52100 with Redwood burl handle. Exceptional knife but I'm just not using it at lot vs my other 240s. It's super light and thin and flies through anything. Blade is acid etched and has a nice patina. I cannot remove the patina without removing the etching so it will stay for the sale. 62 HRC and I have all the original paperwork.

Takeda 170 as clad nakiri.
After getting my CCK cleaver this sits in the drawer. I've sharpened it once and it stays sharp forever with just some stropping.

Thanks Carter. The knife is amazing and truly a great cutting tool. This was my first KS profile and it just didn't speak to me. I hope someone else can enjoy it and I'll be going back to Carter with zero hesitations for my next custom knife (probably one of those nice W2 blades).

My gosh - how tall is the Carter blade. I'm gonna get a taller one (Carter and I have been talking lately - I've already decided on my Christmas present for next year - a 52mm or so tall, slight blade light version of this thing) but I showed it to SO and she said I could think about it - I'll see if she's good with it tomorrow when the wine wears off. She will make me get rid of something, so my cousin may get a new knife earlier than he knows. I never sell knives - but my relatives get stuff.
I might end up with two CH knives, but we will see what my better half thinks when she sobers up - we had a nice bottle of Pinot Gris with some lentil soup and rice tonight. She looked at the knife, and told me I had agreed to just one knife this year, but she forgives me for my faults most of the time
