Hazenberg 195mm Chef - SOLD!
Hello,
I have the gorgeous Hazenberg 195mm Chef for sale.
White 2, 22 layer cladding. 195mm long.
50mm tall at heal and 3.5mm thick, with full taper to a very very thin tip (see photos).
150 grams. HRC: 63-64
Comes with nice leather saya.
Recently got this to finally try a custom-level knife ... and as impressive as it is, I find I reach for more consumer-level (noob-sumer?) knives and just avoid using this one so I don't damage it ... though I'm sure it can take some beating, I just end up being extra cautious and don't feel comfortable.
Means, by my rules it should go. So far, I cut a couple of apples and potatoes with it.

Wow! How the feel of the handle? My first though would be the steep angle would make hand too angled up. Is that so?

The handle feels pretty great, in a pinch or just by the handle. The handle edges aren't sharp. The angle of the blade to the handle seems fine for me too, as blade itself tapers up so it all kind of aligns on the board.

That is a beautiful knife, GLWS!
I bought a custom set of gyuto and petty from Jelle in 2016 and discussed knives quite a bit with him. He was working in a kitchen, so he has first hand knowledge of kitchen knives unlike some knifemakers who don't. He has definitely refined and progressed since that time. This is a very good deal at that price.
