I don't always get it right but this is the way I have always tried to run my business. I am pretty sure that most people live by similar rules.

The person owning this knife sharpened it on a grinder of some type, very odd the way it turned out. I see this more than I should.

I see the grinder work as eating dinner from a vending machine. On the other hand, Japanese Water Stones represent an elegant meal, the epitome of fine dining.

I like your list. I thought I'd share a couple of thoughts:

1. Yes! Absolutely! Often it's quite a challenge to restore someone's knife to better-than-new working condition. Very rewarding when they appreciate it. We joke with people to beware of cutting themselves with these freshly sharpened knives, and many take pride in reporting their injuries back to us. And, there are some real gems out there that are fun to discover.

3. Completely 100% agree.

4,10,11 Freehand sharpening is so individual I find it difficult to judge at all. However, recognition of one's own shortcomings helps identify strengths in the technique of others. If you take the position that you can never know it all, then you can always learn from others.
