I have been practicing my sharpening technique for almost a year on a mix of Shapton and Suehiro whetstones. I'm decent but still improving.

I don't have one, but every Kurosaki I have is a wonderful blade, and I would look into Kohetsu blades as well (have many - performance over beauty - great stuff)

The Masakage Yuki nakiri gets a lot of love here. I have a Koishi which also performs very well. Yuki is OOS for now though.

I got one of these last year and really like it. Its stainless, good fit and finish with a decent walnut handle and came pretty sharp. Plus its looks really nice!

The Masakage Yuki is my standard pick. Helluva nakiri. Superb cutter and I much prefer taller nakiris to shorter ones. The bunka is available and would perform somewhat similarly. These do tend to come back into stock somewhat regularly.
If you definitely want stainless clad and want something in stock, my second suggestion would be the Yahiko Nashiji. Excellent cutter and nicer looking. On the taller side too. This whole line is high level. https://www.chefknivestogo.com/yawh2nana16.html
