Hi,
I'm looking for a med/lrg petty knife that would be great for slicing shallots, garlic, and other small produce like that. Having some knuckle clearance is a must. I'm not sure if it needs to be a laser, but that couldn't hurt could it?

My Richmond/Kurosaki laser 150mm petty is a dream machine for that.

Check out the Tanaka VG10 150. You'll have to oil the handle periodically but it's tall and very quasi-laser.
Yes yes, vg10, rabble rabble, but his rendition is actually quite nice. I sold my old Tanaka vg10 gyuto to a vg10 hater before I told him it was vg10. He's now under the impression that it's not so bad.
