Are you filleting down the spine through pin bones?

Yes, it will be used for full fish.

Use a scimitar 12inch
Or a nkce soft steel 10inch gyuto

Soft steel and longer is bettter for taking an entire side off
Stiff as well

I just use a 240+ to take off skin and portion

A kanehide should be able to handle it
