Shibata R240 vs Masakage Gyuto 240 ???
So...in the bag...
Currently own and use Shibata 210mm and 175mm. Love the feel (laser), not so much the steel. Also use a Goko 240mm(ish) white steel Gyoto. LOVE LOVE LOVE white steel.
With that in mind, I want to either get the Shibata R240...or something similar. The Masakage seems like it might do the trick (weight). Thoughts? Price is certainly right. Steel is perfect. That said, for me, the feel of the Shibata's is un-matched in use. Just stunning.
All ears. (And all of my knives come from CNTG...so I'm not a straggler. If that matters.)

Assume you are talking about the Shibata Kotetsu R2 240 and the Masakage Yuki in white steel.
The Shibata will eat the Yuki for lunch but the Yuki is still a good knife for the price.
And since you seem to like lasers consider the Shibata Kotetsu AS Gyuto 240mm https://www.chefknivestogo.com/koasgy24.html
Also the Konosuke KS GS+ Gyuto 240mm https://www.chefknivestogo.com/kogs24frstgy.html

Anytime I hear someone mention Yuki, I think they need to look at the makoto line.

I'd look at the Koishi line personally. You' get the feel of the white steel, and almost as long lasting of an edge as the R2.
It'd be a good balance between the two of his current knives.

What don't you like about the Shibata steel? It would be hard to suggest you buy a knife in a steel you don't like.

If you like the Shibata 210mm and 175mm and want a Shibata R240...just get one. I don't know of another knife that would match (laser, performance, edge retention, profile, grind...), let alone best it.

If you don't like the steel why are you considering another in the same?
Suisin Inox, HD2, Kono W2 laser
All would offer steels he may enjoy more while still being s laser.

Yeah...I don't hate R2, just a preference for W2 if I had the choice. I've found I've really had to up my own sharpening game with R2 vs White which seems to magically sharpen itself if you just walk into a room with a stone in it. That said, the learning part has been good for me.
I'm checking out the recommended knives. Thank you very much for your help.

Just got the Kotetsu 240mm. It flat out performs. Absolutely no complaints. Of the three R2 knives I have owned, it has the best feel. Haven't sharpened yet...one of the joys of a Shibata knife is not having to sharpen right of the box.

Yeah...I have a feeling that same knife will end up in my kitchen. The belly geometry on the Kotetsu's is perfect for me, plus...as a previous poster mentioned...I do really like the tip design.
Sigh...I just have a feeling that the entire time I'm using a different knife, I'll be saying to myself, "Shoulda bought the Shibata..." LOL.

Pulled the trigger on the Shibata this evening. "Last one". Can't wait. Spent tonight with the 175mm prepping. Stoked for the 240mm.

I can't argue White 2 is a really nice steel to sharpen. I'm curious though, what stones are you using on your present Shibatas? I have a hunch about something and might have a suggestion for you.

I haven't any trouble sharpening R2 and takes a very wicked edge, much better than I was expecting when I first bought it. My favorite PM at this point. It's just a very good combination of ease of sharpening, edge taking and retention.

Following up - I ended up with the Shibata. (Duh). I haven't had a chance to spend a ton of time with it...I'll use it this evening. Out of the box it's crazy sharp...or course. But the thing that really surprised me was the weight. I knew it would be heavier, but it feels surprisingly heavier than what I was expected. Here a quick comparison (these are my own knives that I weighed a few minutes ago):
Shibata R240 - 167 grams
Shibata R210 - 124 grams
Shibata R175 - 123 grams
Nenox 210mm - 156 grams (custom handle)
Goko White 240mm gyoto - 194 grams
Richmond Addict 240mm gyoto - 203 grams
So it's still quite light in comparison to other similar length blades, but after holder the two smaller Shibata's I've got, it's a surprise at first. My brain thinks it should weigh around 140 grams. But...that's my brain for you.
Anyway...thanks again for the recommendations.
