Rather than brand names, or individual makers, I would concentrate in regions. You have an echizen mid weight, and a sakai laser. I think a Sanjo knife would be a great alternative, the yahikos are from sanjo, as are mazaki, yoshikane, kochi, shigefusa, wakui, etc... while they are very different, they share some common traits that set them apart from knives from other regions. Nice convex grinds, killer distal tapers, thicker spines, harder steel treatments, flatter profiles, very food fit and finish, and very thin behind the edges are common amongst them, though not always present in all.

I sharpened up the honesuki tonight. That was my first venture into such asymmetric sharpening. Somehow I was a bit surprised at how steep the angle is on the main bevel side but I guess that makes sense. The kanehide seems like a pretty solid little knife for the money. I’m going to give breaking down a chicken a go tomorrow with it.
Anyway, I’m not sure if this should be a new thread, but I did pretty much decide to retire a couple Wusthofs. So, I still have a couple slots open. I’m thinking I’ll keep one as a wildcard in case something interesting comes in stock. For the other slot I kind of have my eye on a Bunka or maybe a Nakiri. I’ve never used either kind but I think a lack of a tip would drive me nuts...so Bunka? The Shibata R2 175 Bunka looks interesting and people seem to really like it. Would that be a little bit like a Bunka shaped HD2? There seem to be a lot of similarities aside from shape. I really like the HD2 but I’m trying to avoid too much overlap for now.
I’m also still thinking about the Mazaki. I figure I should spend some time with the CII when it arrives first before I jump into another fully reactive blade though.

I do like the idea of concentrating on regions too. That’s an interesting way to narrow things down a bit

Yeah, that's why it's too much fun haha! Thankfully I'm pretty much out of room in the knife block so I think I'm done for now without selling something or getting another block or something. I do find myself looking at some of the T-F stuff but it sounds like they're a bit hit or miss especially for the price. I think I'd jump at a Kono Fuji if they come in stock. And, I'm already talking myself into more...
The CII arrived yesterday and it sure is pretty. I haven't used it yet though. I think when the Mazaki arrives maybe I'll throw together a quick comparison of all these different knives I've acquired recently
