One thing to consider about the toyama if you go that route it's tall at the heel allowing for alot of clearance, but perhaps taller than one might think they would like/want. But the height tapers. It start at the heel at 45mm by a third away from the heel it's down to 40 mm by halfway it's about 35ish. This ends up making it a really versatile knife.

Um yeah. The Toyoma is $400. Not happening.

No pictures there of the 300mm Mazaki. I found it on cleancut though. No where did I see blade height though. 45mm is pretty tall for me for a 300mm. More sword than knife.

Edit: the 270mm Mazaki is apparently 49mm high at the heel. What? That’s so tall. I want like 39-40mm blade height. Slicing. Not fighting.

I've got a Hinora 270 which is 38mm at the heel and it is within budget at $280...very high quality.

270 mazaki from jns says 43mm i would expect cleancut to be similar.

Two more knife thoughts contenders. 270mm Kaeru and 270mm Zakaru. Still not sure about 270mm vs. 300mm. Having trouble finding 300mm options.

Good to know about the Mazaki.

comes down to the steel and what you prefer, for a slicer i would go white imo but you may need better edge retention so mazaki white is likely the only choice if u want white since he takes it harder (a kato suji is totally out of your budget). kaeru is probably good too if u don't want carbon. not mentioning toyama since u said it was 400 and out of budget. Not sure if u meant zakuri or not but they will be lower quality compared to the others mentioned.

270 vs 300 all depends if you have the working space and how tall you want your suji to be, longer tends to be taller at the heel generally speaking.

So I think the 270mm Mazaki Kasumi may be the knife. I don't want it too tall so I'm hoping JNS may have some in stock that are less than 43mm. I like the look, shape, steel, price, and everything else. A 300mm may be a size I could work with, but there was a chance that it could be too big for my work area. With a longer blade comes a taller blade and I really don't want anything too tall so that also makes me think 270mm may be better. Just hoping that a 40mm or even 38mm Mazaki Kasumi exists. My 210mm Gyuto is 43mm tall. Not sure I want that in a Sujihiki.

i think someone above mentioned already but i'll mention it again, that's just the height at the heel, suji height shortens quite rapidly once it leaves the heel area so u could be looking at 40mm tall <3cm from heel already.

Yup, although the toyama and mazaki may be taller than some at the heel, the taper makes a huge difference and it's still feels and performs like a suji, at least the toyama, I haven't tried the mazaki but I suspect it will have a similiar affect. Not that there's anything wrong with still wanting one even slimmer. I just like it because it makes it more versatile. I was very much of opinion of not wanting taller heel height on the suji, before I got the toyama. So I totally understand the concern.

JNS got back to me and he has an older model Mazaki that is 40mm so looks like that may be solved. Thank you for your insights guys!

just word of advice, older means thicker, first run of jns mazaki were thick - just ask for photo to avoid misbuys.

Ok search is finished and knife is ordered.

Went with the 300mm Toyama Kasumi Sujihiki! Thanks to all involved in this process. Appreciate the insight and advice. Can’t wait for my sword to arrive.

How about rage Gesshin Ginga in either w2 or stainless given you have a Gesshin Kagekiyo and a Konosuke HD2? I find the GG very similar to the HD2 line though I haven’t tried the Sujihiki in particular. This thread triggered the thought and it may go on my list to get next.

I looked at it early on, but I didn’t want another laser. The Toyama I bought will be perfect for me.
