Tanaka Sekiso 210mm blade height

Post by cwillett »

Can someone verify the blade height and thickness on the Tanaka Sekiso 210mm gyuto? The new customs are listed at either 52mm or 54mm

https://www.chefknivestogo.com/tasebl2gy24c1.html

These definitely don't look like they are that tall and the original 210 (non custom) is listed as 48mm.

The thickness of the custom is also listed as a chunky 3.4mm whereas the non custom is listed as 2.9mm.

Was there a big design change? Or mislabeling?

Thanks.

You linked a 240mm not a 210.

I might be missing something, but the link you posted is to a 240 sekiso, not a 210

Edit: what he said :)
Also, 3 of the four customs are listed at ~54mm, and all of them have 3.4 down for the thickness at spine. Also, they're all 244mm long... I wonder if they were each individually measured.

There are no Tanaka Sekiso 210 customs listed that I can find.

Nor are there any 240's non-custom anymore :o [but their stats are found in Steve's video]

52 sounds right to me. I've got one.
54.3 seems to precise to be off, so, I guess there can be variance. But that's barely 2cents worth

Scratch that. I'm looking for a tall 210 with a flat-ish profile and I didn't read things carefully enough. I get my yearly knife purchase in June and I thought the Sekisio might be a contender. Even though it is a ways out, window shopping helps.

Matsubara 210 or Gihei are the closet fits to what you want in 210. Or a Takeda.

How about a Gassan 210? :D

Put in a good word for it on the classifieds ad, will ya?

The Takeda isn't as flat as I'd like, but I'd really like one of the classics. If the 210 bunka ever came back, I'd buy it. The 210 classic gyuto might still be the one and I'd just adapt my cutting technique to it.

My overlength Hassan is out getting a custom handle. It is the best 210 for chopping that I have used. Subpar rocker, but it’s not what I use it for. I almost sold it. Glad I didn’t.
