Cutting Ice Cubes

Hello,

Hope this email finds you well. I wanted to reach out to see what type of knife you recommend for ice carving? I produce clear 2.5” x 2.5” clear ice cubes for cocktails and I’m looking for a blade between 4 - 6 inches to shave corners off the cubes.

Anyone have a suggestion? I seem to remember seeing a Japanese bar tender on YouTube cutting blocks of ice with a cleaver but I really don’t have a good idea on what would work and also what would not chip.

I’ve only seen it done with a machete. I’m sure that was more for show than anything though. That was also starting with a much bigger block than 2.5”

I would throw them up in the air, and swing at them with a chainsaw.

I would think a german steel blade would hold up best.
