@Steve and @Jeffry, I'm interested to know if you had to pick only one between the nashiji, KU and Shimo, which one would it be ( I know you have just ordered your nashiji Jeffry so I'd love to hear your thoughts when you have had a chance to play with it).

The Nashiji being stainless clad changes the equation a bit, but I'll certainly add my thoughts later. If two knives perform similarly well, I might stick with a SS clad depending on the reactivity of the iron clad knife. I like patinas and I've only found one knife with a reactivity too intense for me, so it might not be an issue. Three of my favorite knives are reactive: Sekiso, Kono W#2 and the KS.
I wouldn't mind trying the Yahiko kurouchi. Not now, though.

What is the hardness of the Shimos? I didn't see it listed.

Steve G's video puts it at 61. Feels right. The Yuki is listed at 62/63. My experience with both says the Yuki will microchip a bit more. The Shimo being 'softer' loses nothing except perhaps slight edge retention. The Yuki has SS cladding and better F&F, but that might be its only real advantages.

Thank you, but whoops! Should have asked about the Nashiji. That's the one I've been eyeing up.
Both the Nashiji & Yuki are stainless clad. The flat profile of the Nashiji works well for me. Even as a home cook more edge retention with White 2 appeals to me. I don't mind sharpening, but still.

Sorry to be secretive. It’s the blacksmiths that request anonymity so they don’t get complaints from my competitors. If I give them up publicly they get upset and then no more knives.

So ... who's making the new Yahikos in blue steel? I know they are undisclosed, but does this shop make any of the other Yahikos or are we talking a new smith. Looks a bit like the Koishi.

Wouldn’t you know, I buy the makoto this AM and later in the day Yahiko 240s hit the new arrivals. I don’t quite have buyers remorse, but I had to give them a good look.

I totally agree. Even if I don’t love it, a walnut/maple/blackwood handle with a matching walnut saya would be pretty sexy if I ever wanted to move it.
