Future of chain restaurants
I was embarrassingly let go from my job today. I wasnt given much of a reason but we'll get past that point. I was offered a job at a corporate place (cheesecake factory) as a kitchen manager and it pays about 15 k more. My only concern is do the skills there translate to other outlets if i decide 5 years from now its not for me? Will corporate places exist in 15 years?
Ive never been let go from a job. Truthfully ive always been towards the top of the skill chart and always wotked hard. This has me baffled.

Nothing to be embarrassed about. I am not sure about the US but the casual dining brands on our high streets in the UK are really struggling. It’s so competitive and there really is a ‘race to the bottom’ mentality with many chains going under or shutting restaurants. Also in the UK, authenticity is important for a lot of people now so some people are deliberately choosing to stay away from chains. It does appear to go full circle as a concept starts, opens a few highly successful restaurants, they then open more to support demand and then people move on to the next concept or decide they don’t like chains and the chain ends up closing restaurants following a massive expansion program.
I started my career in the higher end restaurant world and then moved in to food service/contract catering. I am a huge believer that you learn something from every job that can be applied to any/all future roles.
Just concentrate on the next role and remember that most people’s careers are not a straight line, they are more like crazy paving!!!
Best of luck. Gareth

I'm very sorry to hear. As a complete outsider from the industry, I have read that Cheesecake is an especially well-managed chain with tight internal standards. If you can make it work there as a manager then I suspect your skills and experience can translate to many other places.raleighcook15 wrote: ↑Wed Jun 05, 2019 2:20 pm I was embarrassingly let go from my job today. I am sorry, I have been there not too many years ago in a different industry and can sympathize.
I don’t know much about the restaurant industry, I can’t help there.
I was recently listening to a postcast about how being a generalist better prepares people for challenges. Exposure to a variety of challenges is far better for you.

To be honest, it sounds like a good opportunity to expand your experience/knowledge and you can always "peruse" other opportunities while working there.

I'm sorry you got laid off. I have no idea about working for that chain but I hope you land on your feet quickly and this doesn't disrupt your life too much.

Re: Future of chain restaurants
honestly im still in shock. My chef was let go as well, he was a huge issue as is. All my cooks reached out to me and are as shocked as I was. The front of house managers also have texted me. Im curious is management in a corporate environment would give me and advantage for corporate dining, hospitals etc. Maybe ill save the passion I have for food for my home cooking and make a more livable wage in a different avenue.

Life takes funny courses and the universe sometimes gives you a divine kick in the ass. While stressful and demoralizing at first, the hope is that this will turn out in your long term favor.

Yeah its hard to see that at the moment. The more staff that reaches out to me saying it's bs the more annoyed i get to be honest.

Re: Future of chain restaurants
Hi, I'm very sorry to hear about you losing your job. Especially to be blindsided is very unfortunate. I am a GM of a restaurant and I look at kitchen managers from places like Cheesecake Factory very favorably in the hiring process. Cheesecake is known for adherence to procedures and the ability to work well, maintain standards and adhere to procedures in a high volume setting (like most if not all CFs) is a very strong trait. That said, the corp environment may not be for everyone. There is less creativity in those kitchens. You are handed a playbook and expected to execute. so, you had asked do the skills translate to other outlets...well, that really kind of depends on where you want to go. If you want to continue down a management path, I would think it's a good opportunity. If your passion lies in being in the kitchen and creating new dishes and concepts, it may not be where you shine. Best of luck!
