Thanksgiving Dinner
Re: Thanksgiving Dinner
Smoked 3 14 lb. birds over apple wood. Crazy moist and darn good. Used bones with veggie stock for a gallon of gravy and 8 cups of Turkey stock for stuffing.
That was the 'good'. Now the bad:
Someone who-shall-remain-nameless dropped my Shibata AS in the sink and put a 2mm chip in the middle of the profile. Arrrrggghhhh!

I brined and butterflied a pair of boneless turkey breasts, rolled them and stuffed them with a cornbread-apple- bacon stuffing. Basted with butter.
Too busy to photograf out of the oven. Here is a photo the next day of it cold.
Best Thanksgiving centerpiece I’ve ever done.
Sides: jalapeño cheddar mashed potatoes, orange juice and honey glazed carrots, roasted broccoli with breadcrumb-lemon peel-parm topping, sweeties.
Appetizers: homemade pimento cheese, ibérico ham on garlic toasts with heirloom tomato purée.
Desserts: pumpkin pie, apple crisp with oatmeal-caramel topping.

Re: Thanksgiving Dinner
Just brought cheese, rolls and pie to my sister's yesterday. Did get my nephew to carve the bird again - passing it down to the next generation - he managed to carve the whole bird in less than 5 minutes and did a great job. He will have a garatsuke and a decent gyuto when he gets his own place for real and is going to be the carver of birds for some time to come. Coming to realize my SO is correct - I own too many knives and need to plan what to do with them - the master plan is starting to take shape - next gen is into food and need not worry about basic knives

Re: Thanksgiving Dinner
Sounds great Jeff.
I know most of you put me to shame on the home cooking front.
We had roasted turkey, mashed potatoes, corn, cornbread, arroz con gandules, tostones, cranberry sauce.. apple streusel tarts & pumpkin pie with maple whipped cream and sugared cranberries. Oh, and mulled cider with whiskey.
