My Mazaki Kusumi is my usual default but I've been using a Kurosaki AS Fujin a lot lately, a really great knife.

My Kurosaki wa Hammered R2(the "Jeff" knife ;) ) sees a lot of use. The handle I bitched about when I first got it, after some sanding and sealer, has turned into one of my favorites. LOVE that knife, glad I hounded Mark to pick it up! :twisted:

I had a Gihei B#2 165mm tall petty that I used a lot but my brother used it and won't give it back, told me I had to buy another. He calls it the "horsey knife". I hope you get that back in stock someday Mark, I miss that knife. I bought him a nearly new 210 Wakui gyuto and he wigged when he used it. He's a true convert now, he has started giving his Wusthofs to his daughter-in-law.

Nothing else I own cuts like a Shibata 😌

I have been very impressed with my Yahiko Sanjo W2 210, which I bought on the strength of Steve's glowing video review and an excellent write-up by ared715 in Customer Product Reviews. Just a great all-rounder.

And, well, I picked up one of this new batch of Fujis and I can barely put it down.

Great thread by the way. It's really helpful to see what you guys are reaching for on a regular basis.

This might sound rather "ordinary" compared to the others, but at the moment a Kanehide TK.

My go to knife is the Gihei blue #2 240. That knife just seems to get stuff done with no worries. I’m a big fan of the Fujiyama funayuki as well.

Masashi Kobo SLD 240 has been my most frequently used for a very long time. Versatile, balanced between thinness and power, nearly entirely maintenance free, great edge retention. Not my best over all cutter, just the one I grab the most.

Best is my stainless clad Watanabe. But still don’t grab it as much as the Masashi. If for whatever reason the Masashi is ever rendered unusable, I would replace it immediately. Hell I may buy a second just to have the newer profile he started making recently.

Yahiko Sanjo 165mm Santoku.

Great knife, fantastic aesthetics, interesting and effective grind, stiff, confidence inspiring. It is amazing to me how effective the deep grind is and how precise the knife is, despite being very thick coming out of the spine. I really like the finish, which is Rough to the touch, with a sort of hairline-Kurouchi effect.

Mine is an older (circa 2016) Konosuke Fujiyama B#2 270, I love this knife.

Ha, I was wondering what made that your eponymous knife, kidding or otherwise. Is that what happened back in the day?

Update: Just got a new Yoshikane SKD 180 and its going to be my new go to. Just the right size and oh so sharp oob.

Kanehiro 240 AS at work. New stainless-clad Watanabe 240 at home until I get comfortable enough with it to use at work, and then I'll probably switch.

That's basically what happened. I saw that knife I think on Japanny and really liked it so I hounded Mark to until he ordered them. When they came in he dubbed them the "Jeff" knife because of my persistence in making sure he got them. ;) It took a like a year for them to come in.

I don't know if it's my go-to and my knife work has been limited by my thumb tendon injury, but I've gone the opposite direction of most posters.
The knife I'm enjoying most at the moment is the Daovua pipeline steel tall nakiri, the cheapest knife in my arsenal.
