Anryu Knives Updates

I’m getting recurring and persistent questions about the status of Anryu’s knives so I figured I would address them here and also update status since they’re red hot and sell out fast when the do arrive. I’ll point customers to this thread going forward. My information is second hand and I was updated about a month ago.

Anryu is an elderly man. He’s approaching 80 years old and he’s not capable of cranking out blades the way he did in his earlier years. He has no children working with him as far as I know but he does have an outstanding apprentice named Ikeda san who is young and working hard.

Anryu san is handing over the business to Ikeda san now. He’s still going to work in the factory but he’s not doing the important tasks of running the business. Basically he’ll be working the spring hammer and the big wheel blade grinder.

I have some Blue #2 Hammered knives coming next week. If you want one I suggest signing up on the item page and I’ll contact you when they arrive. They sell fast.

P.S. please don’t buy them for sport and then cancel the order after you’ve cooled off. It’s not fair to the others on the list that get shut out and it costs us money in credit card merchant fees to charge you and then refund you (4% round trip).

Mark, Will these be the only Anryn knives you receive or will different types become available?

I am interested in a 180 gyuto and honesuki.

Gyutos are all gone. We have a few santokus left.

Buyers will be happy--I have a 240 hammered and it is a pleasure! I did pop the 210 in my cart then thought...I have the 240, should refrain from greed....lol. Maybe next time...

I have the 240, but it doesn't fit in my block and lives in a bag, coming out somewhat rarely for special occasions. The bunka is in constant rotation though, and is my wife's favorite knife. Happy to have picked up a 210 to round things out. The only thing I'm still jonesing for is a 75mm petty (and I'd especially like it with the d-shaped handle that you can find on some of the AS versions). I basically never use paring knives though and already have too many, but something about Anryu's 75mm calls out to me...

Will the next order also be made by Anryu san hisself? I'm sure Ikeda san knives will be wonderful to, but I've been wanting one by Anryu for a bit now. Last chances I guess.

Anryu and Ikeda both work together and have for over a decade. Ikeda is now handling the business and they're both making knives. The older guys almost never quit if they're physically able to keep working. Often they'll do easier tasks as they get older. When I met the elder Mr. Hinaki from Sukenari he was working sharpening knives that customers brought to the shop instead of the harder work of using the spring hammer or grinding wheel. When I stayed with the Tanaka family from Matsubara they had the elder Mrs. Tanaka still working doing heat treating and spine rounding on a belt sander. Retirement is not a thing looked upon with anticipation as far as I can tell in Japanese culture. At least not in the knife making community. Owning a business is highly valued so the expectation is you run it until you can't go further and then you will it to your kids and keep helping until you die. If you have no kids you adopt your employee and they take over your name.

All this anryu talk makes me want an AS 240. I have a b2. I wonder if the grind and profile are the same on b2 vs AS. Anybody?
