Re: Konosuke Updates
Tall and, um, short? Mark....I think you have a typo in the description of the 210 with the ebony handle. Says the dimensions are 51mm tall and 20mm long. I know they have to be at least ten times longer !

Re: Konosuke Updates
There is the “Jeff knife” and now the “Jeff couch”. Which knife are you considering?

Re: Konosuke Updates
Thanks so much....I think these attributes will be just what I want. I love a sense of “authority” but I am a sucker for the ability to slip through onions horizontally. I do tip work daily... thanks so much for your impressions. And thanks, Kosuke, for this new effort.d_rap wrote: ↑Wed Jun 03, 2020 9:57 pm I also just recently purchased a Ryusei, 240, and I've had one of these new FMs for some weeks now. I've been using them side by side for a week. Perhaps remarkably, if anything, the FM edges out the Makoto, or at least ties it, for effortless horizontal cuts in onions. The FM has authoritative heft yet gets so thin at the edge and is so well ground at the tip that what might be a compromise for the sake of power in some knives just becomes another asset in many finer cuts. While I'd reach for the thinner Makoto to make a big batch of coleslaw, the new FM straddles the gap between power and finesse remarkably well.

Re: Konosuke Updates
White #2 will be released by the other vendor, and those have 3rd priority at the Fujiyama blacksmith now.
Thank you for asking!

We'll get 270s from the sharpening process in 5-6 weeks.
We'll prepare ASAP!
(300 will be 4 weeks later)

Re: Konosuke Updates
Hi Kosuke,
I'll put pages up so customers can sign up for them.
The new designs are really nice. The blade grinds are excellent.

Re: Konosuke Updates
I think my heart is still set on the SKD tsuchime 210mm. Is there an approximate ETA on those?
Re: Konosuke Updates
I’m afraid I can’t tell the detailed forecast now, but those are in progress at the workshop.
We’ll raise the priority of that with checking the situation!

Re: Konosuke Updates
What handle do you want? I have a couple without handles and I could install one for you. I was planning on doing customs on them like this.

But I could get you a handle from Kosuke to install on it.

Re: Konosuke Updates
Kosuke handles are so unique and well done...I have a hard time seeing how anything else could be a substantial improvement apart from some exotics like KOA or similar.
Re: Konosuke Updates
Khii ebony if that's an option! Otherwise I'll wait for the next batch from KonosukeChefKnivesToGo wrote: ↑Thu Jun 11, 2020 10:59 amWhat handle do you want? I have a couple without handles and I could install one for you. I was planning on doing customs on them like this.

Re: Konosuke Updates
Question1:
Was there, is there, or will there ever be a...
Stainless-clad carbon Konosuke knife?
Just curious
Question2:
The MM Ginsan & MM B#2 were forged by a lady bladesmith. Is her name public, or is it kept private?
Also, the sharpener is the same fellow from the FM series, correct?
