That there is not a knife for the kitchen...That is meant for cow decapitation! I have seen this fellow before and I too enjoy watching.

Interesting that he switches hands instead of flipping the knife. Does anybody else do that?

I've tried being ambidextrous but it didn't work for me. I have seen others do it that way in videos.

I like doing both while sharpening. Switching hands or flipping on one side. Either way feels fine and the angle remains the same. Generally, I lay my knives flat on the stone or extremely close, depending on the knife.

Yes, it gives me consistent viewing of the blade angle. I feel my motion is also more consistent than when I flip the knife.

When i first started sharpening the concept of sharpening was pretty easy for me to understand so i did no real research. I would change hands because it felt natural ... But being that i wasn't getting the edges i wanted i started to do some research, and all the experts said to keep the same hand and flip the knife..... This was extremely difficult for me... I had a lot of trouble keeping a consistent angle on the left side of the knife after that.... So much so i wanted to give up sharpening honestly. I worked for months almost a year to get comfortable and consistent results on the left side.Obviously now in hindsight other than one basic rule.....i.e. Hold a consistent angle.... Its all up to the sharpener and what works for you. Lol wish i had found this site like 9 years ago.

I'm a hand switcher

I mostly flip but do on occasion switch hands given the task at hand. I'm definitively more consistent with flipping though for general sharpening.

I've been flipping the blade, but maybe I'll have to try switching hands. The motions feel more natural to me with the edge facing away. Frankly, I don't like sharpening as much half the time, when I flip the blade.
