Is it a Standard?
Are you happy?

It came from the classifieds...kinda of. I missed one that was listed and the seller sent me a message about a week later that he had another coming and wanted to know if I was still interested. Not sure how this individual gets a hold of so many but he has sold several that I have seen. My luck it is probably a counterfit! It was new but came in a plain aftermarket knife box. I've bought a used and new Kato now but don't have an original Kato knife box. I think the boxes are more rare than the knife! :D

BigPapiDoesItAgain wrote: Thu Jan 10, 2019 8:23 pm So, I'm a newb...second post on the site and this is my second Japanese knife (I have a Shun classic utility knife I received as a gift years ago). It came down to this Minamoto Nashiji Blue #2 210 mm gyuto and Takamura Chromax 210 mm gyuto. The decider for me was the handle (black will look better with the Wusthof Classic knives I already have) and the slightly smaller size of the blade (it is actually 203 mm). I had it finished off with the CKTG sharpening service, and it was pretty darn perfect out of the box. Card said: by Mark @ 12 degrees, Shapton Glass 2K, Shapton Pro 5K, Bovine Strop + 1.0 micron diamond paste.
This looks great! I'm a sucker for finishes like this. Have fun!

Well done Jeff!! Same happened to me. I was completely resigned to the fact that I wouldn’t ever own a Kato and then one used and one BNIB arrived in quick succession!!!

YES! Great buys! You had good timing to grab one of those 270 Fujis. Congrats!

What a great one it is. Congrats on that buy. I've been tempted to buy one but never pulled the trigger. Let us know how you like it!

Now you’ve got me jealous, Ray. That’s one knife that I have wanted for a long time. Nice score!

I’ve got a 270, and it is by far my most used honyaki. I’m digging the classy handle on yours 👍🏻

How does it compare to the kasumi you had? That's the only reason I didn't buy one, because I love my kasumi 240.

The grind on my honyaki is nearly identical to the grind of my former kasumi, which is why I love it so much. The only real difference that I noticed is that the tip on the honyaki is a tad thicker. Horizontal cuts and tip work are still good, but it’s not as fluid as my old kasumi. Not an issue though because I plan on thinning the tip down in the near future.
