It's not fair to put the Carter rehandled Doi in the same post with that awesome HHH gyuto! Everything Randy and Junior have been making recently has been f* incredible. That is the nicest Doi I've seen on the interwebz tho.

Actually the one above isn't mine, I just had brought it at home to clean before returning it after a club event I'm in charge of.
I am debating keeping the one below though. Not a huge nakiri fan, but...

The Bloodroot is from the November lottery, so I suspect it was made in September or October. It is absolutely magnificent in terms of fit and finish, and it is also one of the thinnest, most precise grinds I've seen, at least according to first impressions. I've only had it for a few days...

The Nubatama is good so far. I've used it the least, to be honest. The factory edge on it is the best I've ever encountered in terms of sharpness. It is also the flattest profile I own at this point. I see that, in the picture, it looks like it has some kind of shinogi or something, but it doesn't. Like most Nubatamas, it is a smooth, very subtle convex grind from spine to edge.

Thanks for the complement, Mauichef - even though I didn't know a thing when I bought most of these, I can't say I have a single regret with these knives. I love each one in its own way. And I'm with you - I can't wait to see what happens to this collection over the next year!

A 240 Kono Ginsan, a 210 HD2 Western, and a 210 HD2.
The cutting board is a recent purchase—thanks for the comment! My other board is a bit larger...that is my smaller utility board and also my "stainless" side (although that is a loose category!). The other knife I'm waiting on is my first honyaki...very excited!

I never sold mine. This is my old one. I did consider buying a second one at point...! I also have thought about selling mine from time to time (I've thought about selling each of my knives at some point), but it is such a work of art that I haven't ever "really" considered it.
