I’ve been missing my Shig 210 ever since selling it to a fellow forum member so I‘ve been on the hunt for a larger version. This Shig 270 has a monsterous flat spot!

!!!!!!!!!!!!!!!!!!!!! That is seriously approaching "I can't own Staub because it is too heavy to lift out of the oven" proportions. Hahahaha. Not really but...wowza that's a big one. With any other handle that puppy would easily break 9oz.

Two chef knives, the top is a 220mm out of Elmax from Andrei Nikolaevich and the bottom is an integral 220mm 52100 chef from Alex Horn who is one of the Muteki smiths:
