Thanks for all the comments, everyone! The Dalman is really impressive, but the angle of the spine/handle isn't my style. Wish it fit my cutting style better. The Ikeda, on the other hand, is fantastic! Got it for a good price from Bernal as a second. Couldn't pass it up.

That Dalman looks awesome! I can appreciate it has a unique angle there, but...

Love me some Toyama! Was offered a like new 210 Damascus at a good price and couldn't say no!

Great catch Jeff. Looks to be a great profile, i presume the actual length is bigger than 210mm.

Jeff, what’s the height on that 210? I’ve been a 240/270 (mostly 270) guy for the past couple of years, and I’m finally giving shorter knives a shot...provided that the knife has the height that I prefer. Recently picked up a 180 gyuto (185x52) that I’m smitten with, and I now feel the need to add a 210 to my arsenal.

Hi Steve, I've been mostly an oversized 240 guy for several years but I have to say that I'm really starting to enjoy using knives at this size. I have a Mazaki Kasumi with nearly identical measurements of this knife that has become one of my daily drivers. Really looking forward to adding this bad boy to the mix!

That has to be an absolute sweet spot for a 210mm. My 1st JK was a 210mm TF Maboroshi and as much as I own predominately 240's, I still smile when I use the TF. I also have a 210mm HD2 Western and that's pretty cool.

Yea Gareth, I've really fallin' in love having something in that 215ish range and 50mm at the heel.

Beautiful knife. Does anyone have experience with both the Honyaki and Kasumi to compare the two performance wise? Maintenance? etc.

I wasn’t really aiming for a matching set, but it did sort of work out that way. I’m going to go chop up a bunch of stuff now

Thanks! These are all phenomenal and worth the wait IMO. I’m especially liking this new 270. Something about cutting carrots/celery lengthwise with a 270 is very satisfying.
