Kato standard 240. Mammoth tooth handle by Chef Duy Pham
The additional marking on the blade is called kao I believe, it’s Katos way of designating a blade as perfect.

Neat specs on that steel, looking forward to hearing your reviews of it once done.

Very cool! What's the CTS-204 steel usually used for? Looks like you can get Spyderco knives in CTS-204.Delboy wrote: ↑Tue May 28, 2019 11:47 am Custom that's in the works...240mm Gyuto, in San Mai made from 420C cladding & a CTS-204 core. This may very well be the first knife ever made from this steel. It's going to be 1 knife of a 3 part set (I'm only purchasing the Gyuto), & it's going to be on exhibit at Blade before it comes to me. It'll have an amboyna burl handle with copper accents & 1095 damascus ferrule.
Re: Show us your new knife!
Ya know, I'm new to CTS-204 myself. The maker I ordered from usually uses 1095 as the core, but his damascus guy just started making this absolutely new cts-240 clad stuff (apparently, no-one else makes it)....So he offered it to me at the same price as the 1095 (it's going to be more expensive), as long as I let them show off my knife at Blade show this year. As far as I can tell, the cts-204 *should* take a keener edge than the 1095 & hold up just as well, with some stainless properties to boot. I doubt I'll be able to tell a difference to be honest, I think I'll notice when I have to touch it up on a stone, & it'll probably be quite a while until that needs to happen. What I also love about this maker (Dobbler Handmade) is his handles - he's got a pretty unique design.

Kono FM Fuji B2 210mm Gyuto, that I absolutely don't need, just arrived. I'm so weak...

No man...you just have impeccable taste!
Right now the FM is, for me, one of the best knives around.
You already have one or two?
I missed the recent whites and I'm kicking myself.
Well done bro'!

Re: Show us your new knife!
Thanks Ray. I've got the 150mm petty, the 210 and 240 gyutos now. Also have the 240 wide bevel and 255 Funiyuki too, all in B2.
Almost grabbed a W#2 also but just didn't have the funds. The FM family is growing!

I think the wide bevel is a Fujiyama not an FM. That one is finished by Moriihiro.

How well they might sell, you would know best. Jikko seems to be a name becoming more popular all the time.
