Tanaka Ginsan 240mm Gyuto
Image
I had to order this exact knife after seeing this photo. I had been flip flopping over ginsan vs b2 and various handle choices until I saw this.
When these first came out I had managed to buy 6 of them. Three of which were Christmas gifts to my 3 chefs as a thank you for helping crush the holiday madness. And those 3 guys have been abusing the heck out of them ever since.

I bought one for myself, then Rick offered me his which was the original "Prototype". And then James offered the ebony handle version which I couldn't resist. Fantastic knives, especially for the price they were.

I’ve been on the hunt for yo handles knives and found this Tanaka 270 SG2. It was made by Shigeki Tanaka and I have High hopes for it. Maybe Steve will be so kind to let me on his books and apply some of his magic to it. That means my 240 Tanaka will probably be in the classifieds soon.

I really like Takeda's stock Rosewood handles, simple but quality. Would rather have those than some of the Ho wood handles I'm not fond of.

This is such a great find. I'm curious as to what kind of magic you would Steve apply to this?

I’m hoping we find out Marc. He’s currently in Japan enjoying some well deserved down time with his wife, I’m hoping he’ll take it on when he returns. Thought I’d leave him alone until the vacation is over.

Think if there is a next time I'm not bringing anything so I have more time to check things out and spend more money.

You trying to put me to work while I’m on vacation?!! Haha. I’m going hunting for stones today so I’ll hopefully have some new goodies to play with when I get home. I’m always down to take on projects like this so I’ll touch base with you when I get back. Super cool looking knife man!
