Shibata AS 240 just purchased from CKTG. Nice patina forming already after only two days using it at work. Loving the profile, and it (as expected) has the most ridiculously thin grind I’ve ever seen. So far I’ve only used it on carrots (trimming and splitting lengthwise, like warm butter) and a lot of very ripe heirloom tomatoes (basically no resistance). Just touched it up very lightly on my Rika and strops, but the OOTB was, also as expected, fantastic.

My one complaint so far is that the balance point is a little behind my pinch grip, but with such a thin blade it’s not a surprise. It doesn’t bother me too much but I might end up replacing the handle with something lighter eventually.

Bruin, you can sand down the handle some, take the end up some too. But yeah - those knives are quite thin and don't have much weight to pull the balance forward.

But man do they cut well. Mine is in my daily driver drawer rack and gets used often.

Gumbiner 240mm B2 wrought iron clad gyuto

Got this in the mail today. Thinking about doing a passaround. If you have interest and are 250 posts or more, let me know. I'll get around to posting something in the passarounds eventually. This is aogami #2 (blue2) with wrought iron cladding. Kinda rare to see B2 in makers that aren't in Japan or AU. Has got some belly, but nice flat spot towards heel, about 1/3 the blade length. Handle is a really cool piece of curly spalted maple, fordite spacer and ferrule (either ebony, blackwood or really tight bog - not sure!).

52mm above heel
3.4mm spine out of handle
3.1mm above heel
2.5mm mid way down
1.0mm about 1cm from tip.

Some really good convexing in the grind. Beast of a cutter. balance at pinch (right about stamp).

Did a quick test session and love it. Definitely a keeper. It's very thin behind the edge and feels blade heavy in a good way. The food release is just average though. And I love this AS steel Shibata uses. I had a Shibata AS gyuto in the past and loved that steel. This one feels similar on board.
