Just wanted to let you know y'all really made mine and my sous chefs week by selling those Sujihikis you found ! Three years ago we opened A restaurant in SC. We all needed some knives that could take a beating and keep a good edge. Our opening team was slim and we were all working 7 days a week with no time to daily sharpen our fancy knives. 5 of us bought richmonds to use daily and we still use them all the time (my orange handled Richmond is my go to). One of our lines cooks Lance bought the Sujihiki and before the rest of us could purchase one, they were sold out. Last year we lost Lance to liver failure which was a big loss for the whole team, losing a friend and phenomenal cook. I randomly popped on your website the other day and saw the sujihikis and purchased two on the spot, one for me and the other for my sous. We both use our richmonds daily and are super excited to have the Hijikis in our arsenal. We both own much more expensive knives, but our daily knives are our richmonds. A good knife can really become an extension of a cook, keep up the good work ! Thanks for making making our week/month ! - Will

Susan, thanks for finding a saya that "fit" my knife rather than what's "supposed" to fit. I also LOVE the new handle! THANK YOU!!!

What an amazing experience CKTG has given me.
I ordered a Gihei blue #2 gyuto and a CKTG strop kit on Tuesday evening, Western Australian time about 11 pm when it came back into stock.
Realized I had forgotten to ask for initial sharpening, emailed Mark requesting it be done.
Mark emailed me back at 12.15 am (my time) Wednesday to say it was already packed and awaiting pickup, but not to worry, Mr. Hosikawas' sharpening would be more than satisfactory.
DHL delivered the knife and strop kit this morning (Sunday) at 11am.
Just over four days from Wisconsin to the other end of the planet, Western Australia
Mark was right, I could do the "tissue thin tomato slice" trick straight out of the box.
It may not be unusual for US customers, but the whole experience is un-bloody- believable here at the bottom of the world.
As for the gyuto, what a thing of great beauty.
I may just frame it and hang it on the wall

WOW!!! Honestly the best customer service ever. Their fulfilment is what any other companies fulfilment should aspire to be. I have ordered 4 items from CKTG. 1) an Imanishi Pink Brick 220 Grit almost a year ago and Three knives in the Last month. I have only had the pleasure of dealing with Mark but I can imagine for this crew to offer this type of service, they must all be some of the most hard working, caring, dedicated people I have ever had the pleasure of dealing(or not dealing with). The product is top notch!!! They package the items as if they were shipping it to family. Many fortune 500 companies should take seminars on CS and Fulfilment from CKTG. Customer for life!!!! I tried calling Mark about 20 times today just to tell him all this personally but I guess he is crazy busy making all this magic happen.

Hi Mark,
It's amazing to see how many awesome knives you've been able to
curate, I've been following you guys for 6 years now! I started out
modifying Macs and other nice knives in 2011 when it was difficult to
find good chef knives, you really became a source of inspiration for
me when you first started producing Richmond. I know this all sounds
rather sappy, but I want to thank you for everything you've done to
make Knife standards higher in professional kitchens, you made a real
difference in my life.

The family member for whom I purchased these knives for cannot stop raving about them. So, I decided that I needed to purchase one for myself. Please hand select one with a beautiful handle and F&F as this will become a treasured heirloom for myself - just as the others already have from my previous order. Thank you very much!
