Yoshimitsu Fugen a must try
I'm telling you guys this knife is far better than it's pp! In fact it's even become my wife's go-to knife. I bought the bunka just to try a w1 and a 170mm bunka, and while this is not a "review", it is a call to action for all us knife enthusiasts. This knife, from the choil view, is the thinnest I've ever seen! It's whisper thin. I know it's mostly at the heel that I see this, as the grind seems to be it's highest at the heel on this knife. Still, it's crazy thin! It also sounds like it on the board, so beware of technique.
When it comes to the grind, this knife is definitely different than anything I've tried and mostly why I'm saying, you guys gotta try this. The grind is not really high on the knife, but so frickin thin it is a dreamy cutter. It's performance is unmatched on a cheap knife IMO. It glides through thick pots like a laser and it's food release is really, really good. And at 70$!!!!
It is brittle. I lost the tip in the first two sessions of prep. But holy cow is this thing worth its value. Like I said, my wife reaches for this one daily. It's such a good cutter, and with Marks finish sharpening on this one, damn is it impressive. I will say the handle is shit, like a cheap Tojiro(Kit I know you'll appraeciate this one), but my gosh this knife can cut. I personally am truly enjoying this knife, and think you all should try.

I agree. I'd really like to try the 180 gyuto. They're so inexpensive though. Do people passaround cheap knives or do they just buy them?

I own both the 170mm bunka and the 180mm gyuto. Except for the handle,they are very well made. Both are a joy to use. Even the kurouchi finish is holding up well.
They are a dream to sharpen, get scary sharp, and they stay that way.
Fun to use, and mine see a lot of home use.
For the price, they are a great buy.

No, no, no! No more knives! I have that darn KS on the way (somewhere in customs land for the past week) and I just got the HD2 before that and a 240 dragon before that...Getting to the point where I will have as many knives as stones...and we don't need that.

Just FYI I recommend you sharpen this knife out of the box or if you don't know how have us do it. The edges need a few minutes on the stones to make them cut as described.
For fun, I sharpened Spencer's knife gratis if I remember correctly.

At $60-80 it's a good subject for a custom thin, polish, and rehandle for someone considering a lower cost knife or a gift or whatever. The Yamashins are good for this, too, and they already come with a nice handle. I would consider taking part in a free passaround, but for cash, I might just favor buying one flat out.

You did! And thank you. It's got a killer edge. I like getting the card with the progression used for the sharpening. Really adds to the experience of purchasing.
