Ontario/Old Hickory slicer, butcher and some other knives are nice. However, I recommended against the 'cooks knife' unless you have a belt grinder! It is basically a knife blank. As thick at the tip as the base of the spine and damn near as thick at the edge too. It is only like $15 though and it is a good knife blank as long as someone realizes that before they buy it. I do not have a belt grinder, btw and used diamond plates and stones. I highly advise against that for ones sanity.
Yep will be using a belt grinder, also want to try rehandling as I haven’t done that project yet.

I have a stainless Mora which is incredible for $12 new but I found that wide convex grind perplexing to sharpen.

Does secondhand count? I just picked up a Mac Original for $2 at an indoor flea market. Sharpened up nicely. Weird shape and no real tip. This will be going to a family member who will love it, I am sure. For $2 I could not say no.

It would be my "Kaiki Crafstman made" Honmamon 165mm Funayuki. $35. Bought it to try what is white steel ... and yeh, it's impressive how sharp it'll get. Also people say it's prettiest of all knives I have .. being the cheapest.
Though, being so inexpensive there are drawbacks, like being super chippy. I made the handle as practice / fun weekend project (original handle cracked after a few months of use).
Amazon link (though I'm sure you can get better quality w2 knives).

Ken's an expert at cutting his foot. Besides the most recent incident, I seem to recall him trying to do some yard work and hacking his leg with a Japanese sickle.

This beater is fairly dull. Yes I have shed blood before, but spent far more time controlling the bleeding of others / patients.

I remember a med student asking a trauma surgeon what he considered a lot of bleeding. He answered 'when I can hear It'. I did finally hear it. ..

A schizophrenic patient decided to jump off of an overpass into an oncoming truck on an Atlanta highway. When I walked into the operating room, it was hard to tell which end of hers was the head - until both femoral arteries came loose. Looked like dancing snakes and yes you could hear her bleeding out.

Do you like that one better than the one we carry? https://www.chefknivestogo.com/kuriswcape.html

I'm not opposed to picking it up. Our customers seem to really go for peelers.

Haven't tried the one you are carrying. One thing I like about the piranha is that the blade is toothy. It's very aggressive and makes quick work of anything I ever throw at it.

I'm not sure what qualifies as inexpensive. But a favorite of mine is an older Sabatier 6" petty knife that I grabbed for $20. It works extremely well for a wide variety of tasks for me.
