Hmm, I think you would like the Konosuke KS Kit. This is a pretty complex question, as simple as it seems. As you know the old Masamoto KS had a lot of variance. I no longer own the new Masamoto KS (I prefer the old), but here's a few shots of an OG Masamoto KS beside the Konosuke GS+ KS.Kit Craft wrote: ↑Fri Apr 13, 2018 9:42 pmIs the profile on this KS/GS+ as dead flat as the actual KS? As much as I love my KS I find myself wishing I didn't come to such a dead stop at the heel and had a bit of belly sooner than 2/3 out. Not a lot in either direction, just a smidgen. I can not be alone on this as I know a few pros have posted about slightly 'rounding' out their KS profiles.
The Konosuke is quite a bit shorter in length, so naturally the profile differs slightly. There is more belly towards the tip and I don't get the feeling that I need to ease the heel (yet anyway). Here's some bad photos to ponder.
Masamoto KS
Weight - 6.28 oz
Length - 256mm
Height - 48mm
Width - 2.8mm
Konosuke GS+ KS
Weight - 4.72 oz
Length - 243mm
Height - 47mm
Width - 2mm
Together
Konosuke
Masamoto
That would be cool. Like Jeff, mine felt more like a petty than a gyuto, and I'm not a particularly large fella.ChefKnivesToGo wrote: ↑Sat Apr 14, 2018 3:47 pm I need to bug Kosuke to make the 210s at 210mm in real edge length and taller too.
If you sold them as pettys, I bet we would have loved them

Re: Konosuke GS+ KS first impressions
Thank you for the detailed answer. I do like that profile shot. My newer style KS does seem to have a bit more flat than your older one, not loads but enough so that I feel that abrupt stop. Love the knife though. Really pondering this Kono though! The price...is out of this world.
Re: Konosuke GS+ KS first impressions
Mhm, I wish I hadn't sold my newer Masamoto so I could compare it to the Konosuke. I know you and most people own the newer version and it's a lot more consistent throughout. Great knife, but I had no reason to keep it around.Kit Craft wrote: ↑Sat Apr 14, 2018 6:20 pm Thank you for the detailed answer. I do like that profile shot. If you didn't own the Masamoto, it would probably be an easy choice based on the price.
My thinking is simple - this Konosuke KS won't be available forever. Sooner than later it will be elusive like the Funayuki.

I don’t have a wooden box, I’m feeling left out. I better find a Tanaka I like.

They don't all come with a wooden box, in fact most don't. Mark sells wooden boxes though.

I have a Tsubaya, which I think is forged by Tanaka, cardboard box though. I think I’m just looking for an excuse to buy another knife and as much as everyone raves about their Tanakas I’ll probably give one a try. The price point is right for a catch and release, something I’ve been doing and will continue to do for awhile just trying to put my hands on a few knifes. It would be nice if lived closer to a shop where you could put your hands on them, catch and release is fun too though.

Re: Konosuke GS+ KS first impressions
My new 270 seems slightly rounded, which is not what i expected based on the reviews id read about it. Is your KS literally dead flat for the back half? Maybe I'm misinterpreting "flat" to be as flat as a level. I'll post a picture of the profile of my new KS when I get home.Kit Craft wrote: ↑Sat Apr 14, 2018 4:14 pmI like the box too. Yeah, we have issues.fujiyama wrote: ↑Sat Apr 14, 2018 2:42 pm
Interesting! My HD2 box has the Konosuke logo imprinted. This is my first of about two dozen. I agree though; still the nicest style I've seen.. you know we have problems, right?
I want to clarify; I support this (minor)change!
They really nailed the profile on this one! Very comfortable in the hand thanks to the exposed tang (for lack of better terms on my end). For anyone concerned about heel height - I don't find this an issue at all.
It's quite different from the Masamoto, but they compliment each other nicely.

Re: Konosuke GS+ KS first impressions
Yes, at the heel it is dead flat. I have no back belly at all and I like a smidgen to avoid slamming into the board on G&G and or rocking herbs. That is not to say the whole profile is dead flat because it is not but it is pretty darn flat.Drewski wrote: ↑Wed Apr 18, 2018 3:07 pm

Re: Konosuke GS+ KS first impressions
That's how I feel about my HD2, oddly enough.
The GS+ KS is taking on some unexpected, but welcome patina. I like this semi stainless.
Re: Konosuke GS+ KS first impressions
Any photo of this semi-stainless patina is appreciated!

New 270 KS profile, not dead flat. Cell phone quality pics but you can see the light clearly on the reflective counter top. Is this normal on a KS?
