I've got a 210cm gyuto that I love using for meat prep, it holds an amazing edge. But it has a very small D-shaped style handle which doesn't feel comfortable (I've got large hands).
Does anyone know of someone in Australia that will rehandle a knife? I would consider shipping it overseas, but importing wooden products back into this country can be difficult sometimes thanks to strict quarantine laws. I actually already have several blocks of ringed gidgee I could supply, so if they'd use one as part of the handle it would be pretty great.

Hi There Pecanberry. You could also try Christian Timms of Japanese Tools Australia. They are mainly into Japanese woodworking tools, but also do Japanese knives, synthetic sharpening stones etc. I'm no sure if they would dio it themselves, but being into woodworking I'm sure he could point you in the right direction.

I have heard many things about chefsarmoury, but none of them good... James from Knives and Stones is your best bet, amazing guy and knows what he is doing.
