Anyone else see that neat Lil paring knife?
This lil fella
https://www.chefknivestogo.com/fruitknife.html
Looks sweet af. Had to order one. Love 3.5” paring knives for small tasks (defooting garlic, peeling shallots, peeling tomatoes, etc) and with a saya? Hard to pass up especially with a steel I haven’t used at a nice price. I’ll let y’all know how it handles on the hot line.

Oh man! I must have seen it before they were inventoried. Thanks for the heads up!

What is V1... or what does it compare with steel-wise?

V1 or VG-1 slots in between VG-10 and 440 in terms of grain structure and edge holding characteristics.
VG1 has less molybdenum and is absent vanadium, manganese, and cobalt. It does contain nickel which VG-10 does not.
Over all the steel properties are very similar to VG-10 with maybe slightly less stain resistance but almost as much durability and ease of sharpening.

Damn Ray. That's a serious explanation. Nice!mauichef wrote: ↑Wed Aug 01, 2018 2:38 pmV1 or VG-1 slots in between VG-10 and 440 in terms of grain structure and edge holding characteristics.

I saw these. Was gonna slap one on my next order to free shipping. Good possibility for good camping knife, maybe fishing too. Bet it would fit in tackle box nicely.

And I agree, this little puppy is going to be a very popular kit knife for all kinds of uses and occasions.

Neat! If they're still in stock that's definitely being added to my next order.

I got two similar knives from someone else a few years ago and keep them in my glove box, great for sushi /chinese places with bites that might be too big (like Panda Express). Also make great stocking stuffers.

Re: Anyone else see that neat Lil paring knife?
I don't quite understand what it is. It really looks like a single-bevel knife to me, and Mark only took pictures of one side and provides no further description of the grind, etc.
I think if it were single-bevel, it would be really, really interesting, and it would probably be a ton of fun to play with to try to learn a few new in-hand techniques and how a very thin chisel grind can aid them. If it is double-bevel, it could still be fun, but it would help to know whether it is thick or not.
I'll look forward to hearing what people have to say about this little guy!

I bought it because I liked the baby friction fit saya that comes with it.
I’ll try and remember to take another photo. It’s ground on both sides.

It’s definitely not what I expected but we shall see. Saya is definitely fickle but a nice touch.

Beats me. I was assuming it was there to hold the handle on but I haven’t taken one apart to check it.
