Anton Wingen Jr 10" Slicer - Revitalization

Post by GopherBroke »

I still have guilty feelings about this knife as I more or less stole it from ChefSpance when he recently listed in on the classifieds:
viewtopic.php?f=16&t=1063

The knife as it were when it arrived from Spence:

There was no doubt in my mind that the knife was going to be a conversion, from Yo to Wa!
The scales came of as well as the bolster.

The blade..
Cleaned up very nicely except for one dark line/anomaly in the right side of the blade. No matter how much I removed, or what grit I used the line remained. So, I chalked it up as character! The edge that it took isn't all that bad, but it certainly reminds me of my German knives of yesteryear. It gets sharp enough to thinly slice a pork roast!

The handle...
Is a disappointment to put it lightly.
It was supposed to be an exceptional piece of African Blackwood, and well... as you can see, it isn't!

And.. it got a K-tip! :o

Thanks Spence!

Great job on the conversation. How did you grind all that steel off?

Belt sander/knife grinder and a variety of 3M belts.
The same set up I'm using to produce blades (coming soon) ;-)

Looks awesome man! Glad the knife found some use. I thought I worked well for a slicer, I just have others I use already. Now can I have it back

It turned out well.
Its definitely not JK-like steel, but it'll suffice for as little as I'll use it.

You wanna borrow it? Lol

THIS!. While I do love my new knives from Mark, it keeps me going getting a "hand me down" from someone and making it my own to give away. Just a hobby for me. but I like doing it and I really appreciate you guys sharing your work. I think I do "ok" but you guys keep showing me what is possible.

Dude they fall into my lap like four times a year! It's the very fortunate side effect of clearing clients' estates :D
