I've had my White #2 Fuji 270 for 5 or 6 years. In that time I've done a huge amount of thinning and work to it. I basically added my own aesthetic and as you guys know these knives came without a shinogi. From the sharpening and thinning, it now has a shinogi on either side. It's super thin behind the edge and just glides through things. I've settled on giving it a rough kind of finish with a carbide 1.5k stone, before finishing the edge with a Kozaki Aoto(great edge). Love this knife and how sharp it gets. It's more like a pseudo blue #2 now. Other knife in the pic from left to right: BLue 2 ko deba, blue 2 nakiri, SLD santoko(great edge and edge holding).

Thanks guys. It's been such a joy to work on and take care of. The steel is fairly hard so it's taken a while to get it where it's at...and I'm happy with it now.
It was a bit thick when I first got it...quite a bit thicker than it is now. I had the blue #2 blues.

These are the stones I'm currently using(I could get a much fancier shinogi and finish if I wanted...I'm not concerned). I've attained nice results previously. Left to right is: 1.5k carbide, Kozaki Aoto 3-4k, Shinden Suita 4-6k.

Here's a shot of the Ko deba. Fantastic little knife...white steel. Finish done by 1.5k carbide...edge by Kozaki Aoto. Extremely sharp and great little knife; very useful. I originally got it for $20. It's more or less a tall petty.
