Got a Shapton Pro 2000 for Christmas. I felt like I had to work my mom's slicer before she tackled the roast. I was really happy with the outcome. Until she started slicing the roast on the metal roasting pan. This is why we can't have nice things.

Possibly preferable in this instance, as my mom frequently cleans her pull out wood board with Windex...

I was fairly impressed with its speed for a 2k. It's going in a travel bag along with a 500. Means when we visit people, I can just sharpen their knives and avoid socialization all together. It's a win, win, win.

It is an impressive stone in many ways, or so I think. I like the 500 too.
