Hello, I am a chef working in this industry for quite a while.
I have purchased more than a couple knives from chefknifetogo a couple years ago.
I have two Masakake Koishi, one Kanehiro gyuto, and Doi Yanagiba for carbon steal, and also have a a couple stainless knives from Nenox.
Obviously, I have sharpened my knives myself before one of my cooks broke my stone. and...
now I have been very interested in natural stones and I was about to buy some low, mid synthetic stone ans natural finish stone: For synthetic stones, for low and mid grits, Gesshin 400, 2000, and for finishing stones, Hideriyama from Japaneseknifeimports.com.
But, I thought it would be better if I do little more research for what I am doing before I spend a lot of money on the sharpening stones. and I just spent 5 hours reading the posts and watching Youtube.
After I saw lots of post on the forum that kit craft, Ken and lots of other people talking about many different kinds of natural stones and how it reacts to the steals and knives, it makes me wonder if I can spend my money more effectively and efficiently.
It seems Aoto is one of great natural stones for mid grits although I am not so sure if I should use natural stone for mid grits as well as for the person who has never used a natural stone.
So, my real question is, lets say I have $400 budget to spend on the stones with at least one natural stone.
What stones would be more effective and valued purchase?
it seems lots of people asking similar questions, but I could not find my answer.

It's been a while since I've heard of Nenox on these forums. I have a few of them. Good knives.
Aoto are, as you have read very useful stones. Strtictly speaking they are not considered I have a number of other Japanese natural stones that you can choose from. Since you are new to the forum, I will try to contact you and offer some suggestions to you, including suggestions like Hideriyama, Takashima, Yaginoshima Asagi etc as well as various types of Aoto.

Yep, when starting from zero it can be overwhelming. Ken has a way of putting things into perspective and discovering what your wants/needs are even if you yourself can not express them or simply don't know what you want. Wonderful place to start for sure and taking with Ken is simply fun too!
